Meet Chef Rambo

If you've ever enjoyed one of our weekly specials, chances are you've already met Chef Rambo... at least through his food.

Born in Nepal, Ramesh "Rambo" Maharjan arrived in Australia in 2013 with plans for a career in IT. Like many great stories, things didn't quite go to plan. While helping a friend by washing dishes in a restaurant kitchen, he discovered something far more exciting than computer screens, cooking.

What started as a casual helping hand quickly turned into a passion. Rambo worked his way through Indian, Nepalese, Thai, and pub kitchens across Sydney, learning every station, every service, and every trick of the trade along the way.

Starting as a kitchen hand, he studied while he worked, earning his commercial cookery qualifications and steadily climbing the ranks from demi chef to commis chef, sous chef, and eventually Head Chef.

Rambo joined The Royal Darlington in 2016 and quickly became a favourite among staff and locals alike. In 2019, he stepped into the role of Head Chef and hasn't looked back. Today he's the creative force behind the weekly specials board, mixing pub classics with flavours inspired by his travels, culture, and years of experience in the kitchen.

When he's not cooking, you'll find Rambo travelling, taking photos, keeping up with the latest technology, or following soccer. Fun fact: he used to coach as well as play.

Ask Rambo what he loves most about The Royal and he'll tell you it's the people. He often jokes that The Royal feels like a palace filled with family, and after nearly a decade here, it's become his second home.
